Jello Pudding Salad

Here's the recipe for the jello salad I used at the reunion. I've been getting a lot of delicious recipes from http://www.justgetoffyourbuttandbake.com. Jonna was in my home ward for a time. I just copied & pasted this right from her blog:

This jello pudding recipe, is quick, easy & delicious. The thing I like about this recipe, is you can use any flavor of jello & use any fruit you like. I’ve used raspberry jello with frozen raspberries & huckleberries in this picture. It’s really good with orange jello, pineapple chunks & mandarin oranges as well. I also like to sprinkle the top with nuts, before serving. Use your imagination!

YOU WILL NEED:
1 Small package of Raspberry jello
1 Small pkg. vanilla pudding (not instant)
2 1/2 c. water
9 ounce Cool Whip
2 cups frozen raspberries, optional
1 cup huckleberries, optional

(Use any flavor jello & fruit you like)
Orange jello with mandarin oranges is very good
Bring to boil jello, pudding, and water. Cool completely, then fold in Cool Whip. Add fruit, then refrigerate for at least 1 hour.

Pasta Carbonara

Baked Lemon Pasta

Ingredients 1 pound Thin Spaghetti 4 Tablespoons Salted Butter 2 Tablespoons Olive Oil 2 cloves Garlic, Minced 1 whole Lemon, Juiced And Zested 2 cups Sour Cream ½ teaspoons Kosher Salt, Or More To Taste Plenty Of Grated Parmesan Cheese Flat-leaf Parsley, Chopped Extra Lemon Juice Preparation Instructions Preheat oven to 375 degrees. Cook spaghetti until al dente. In a skillet, melt butter with olive oil over LOW HEAT. When butter is melted, add minced garlic. Squeeze lemon juice into the pan. Turn off heat. Add sour cream and stir mixture together. Add lemon zest and salt. Taste, then add more salt if necessary. Pour mixture over drained spaghetti and stir together, then pour spaghetti into an oven safe dish. Bake, covered, for 15 minutes. Then remove foil and bake for an additional 7 to 10 minutes. Spinach Waffles

Spinach in waffles?  Gross, right? Only for people trying to lose weight, right?  WRONG.  Right? Okay, I see how thoroughly confused you are now.  And I know what you're thinking: "wait, she can see me?? Creep!"  Oh, you weren't thinking that? Weird, you should be--that IS creepy.  But I digress...we were speaking of spinach in a standard, non-spinachy food.  The thing is, it's SOOOO good you guys!  I even made regular waffles side by side to compare, and my kids (my KIDS!) said the spinach ones were better (cue jaw drop, gasp, and fake fainting spell).  Full disclosure, one (out of 6) of the kids said they were gross, but she refused to actually taste any, so we just won't pay any attention to her.  She's kind of in the middle anyway, so she's used to it....
