Tortellini Soup

This recipe is super easy and very tasty. You can customize it easily to fit your family's preferences. You will need the following ingredients:

1 to 1.5 lbs lean ground beef
2 1/2 cups beef broth
1 9 oz. package cheese or beef tortellini
2 or 3 cans diced tomatoes, undrained
1 to 1 1/2 cups water
1/2 onion, chopped
4 cloves garlic, minced
1 zucchini, sliced
1 cup frozen or canned corn (drain liquid if using canned)
salt & pepper
grated cheddar cheese, to garnish

Other optional/substitute vegetables include: frozen green beans, frozen okra, spinach, carrots...

Instructions: Heat 1 1/2 Tbs. olive oil at medium-high in a large pot.  Add garlic to oil, and wait until fragrant (about 30 seconds).  Add onion, and stir about 2 minutes.  Add ground beef; brown the ground beef, drain off the fat if there is excess (if you use lean meat, this step isn't necessary. Mix all ingredients EXCEPT the tortellini together, either in a pot on the stove or in a crockpot. Add salt/pepper to taste. Cook on low-medium heat for about 10-15 minutes. Add tortellini to soup and simmer for 10 minutes or so (check the package directions on the tortellini--you don't want to overcook the tortellini or it will fall apart). If you prefer more of a brothy soup, put in more liquid. If you prefer it less brothy, put in the lesser amounts of liquid called for and add a few more vegetables. You can replace the squash with green beans, or just add green beans and squash if you want. I LOVE okra in this soup, but I have come to realize, sadly, that okra-lovers are few and far between :)  This soup is great with whole wheat bread/rolls.

I knew you could do this Jaynee. What a cute background. Thanks for doing this blog. Now we have our own Family recipe blog. It will inspire me to try new things. And I have tasted the Tortellini soup. It is very good.

ah thanks Peggy :) I was thinking too that it is a really good thing to have a blog of our recipes so that we can print out a cookbook once we get a good amount of recipes on here, kind of like the Hornbergers have done. p.s. I can't wait to try your sandwiches! they sound so easy....

Pasta Carbonara

Baked Lemon Pasta

Ingredients 1 pound Thin Spaghetti 4 Tablespoons Salted Butter 2 Tablespoons Olive Oil 2 cloves Garlic, Minced 1 whole Lemon, Juiced And Zested 2 cups Sour Cream ½ teaspoons Kosher Salt, Or More To Taste Plenty Of Grated Parmesan Cheese Flat-leaf Parsley, Chopped Extra Lemon Juice Preparation Instructions Preheat oven to 375 degrees. Cook spaghetti until al dente. In a skillet, melt butter with olive oil over LOW HEAT. When butter is melted, add minced garlic. Squeeze lemon juice into the pan. Turn off heat. Add sour cream and stir mixture together. Add lemon zest and salt. Taste, then add more salt if necessary. Pour mixture over drained spaghetti and stir together, then pour spaghetti into an oven safe dish. Bake, covered, for 15 minutes. Then remove foil and bake for an additional 7 to 10 minutes. Spinach Waffles

Spinach in waffles?  Gross, right? Only for people trying to lose weight, right?  WRONG.  Right? Okay, I see how thoroughly confused you are now.  And I know what you're thinking: "wait, she can see me?? Creep!"  Oh, you weren't thinking that? Weird, you should be--that IS creepy.  But I digress...we were speaking of spinach in a standard, non-spinachy food.  The thing is, it's SOOOO good you guys!  I even made regular waffles side by side to compare, and my kids (my KIDS!) said the spinach ones were better (cue jaw drop, gasp, and fake fainting spell).  Full disclosure, one (out of 6) of the kids said they were gross, but she refused to actually taste any, so we just won't pay any attention to her.  She's kind of in the middle anyway, so she's used to it....
